SOFT CHOCOLATE VERSION:

1 C sugar
1/2 C light corn syrup
1 C heavy cream at room temperature
2.5 oz bittersweet chocolate
4 T butter
1 tsp vanilla

CLASSIC VERSION:
1 C sugar
3/4 C light corn syrup
1 C heavy cream at room temperature
1/2 C butter
1 tsp vanilla

Directions:
Directions:
In a heavy-bottomed sauce pan, stir the sugar and corn syrup together until sugar is completely moistened.
Bring mixture to a boil over medium heat and cook, without stirring, until it turns a very light caramel color; about 5 minutes. This helps develop the caramel flavor.

Remove from heat and slowly pour cream into the sugar mixture (careful..it will bubble up!) and stir to combine.

Return the heat to medium-low and simmer, stirring occasionally, until a candy thermometer inserted in the pot reads 238º, about 12-15 minutes.

Remove from heat and whisk in butter and vanilla (and for chocolate version, the chocolate).

Pour into a greased 8X8 baking dish. Allow to cool completely (at least 2 hours) before cutting into 1" squares.

Cut pieces of wax paper about 3-4" wide then cut strip into four pieces. When you wrap the caramels will become ore of a tube shape than square.
