1 refrigerated pie crust (I always double this recipe!) or you can use the frozen ones!
1 TBSP flour (to sprinkle on top of crusts) If using refrigerated, place in pie tins or fluted quiche pans always looks pretty or a tart pan with a removable bottom)

8oz pkg cream cheese room temperature
1/4 cup sugar
1/4 cup whipping cream
1 TBSP fresh lemon juice
3/4 tsp vanilla extract

FRUIT:
any assortment of fresh fruit,
mangoes, strawberries, blueberries, kiwi, rasberries or anything else you like!

2 TBSP apricot preserves

Preheat oven to 425º

Fold over sides so they are double thick. Pierce bottom of crust with fork. Bake until golden roughly 14 minutes . Let cool.

Meantime beat the cream cheese and sugar in large bowl until smooth. Beat in whipping cream, lemon juice and vanilla. Spread in cool crust. Refrigerate until filing is firm, about 1 hr.

Arrange fruit atop tart (this is where you can get creative and style it out!

Heat preserves stove top or microwave and brush over top (I sometimes don't do this...not crucial.)
Chill for 2 hours and serve!
