1 - 2 #'s of Turkey (I am usually generous, but 1# works!)
2 medium chopped
3/4 cloves of garlic
3-4 stalks of celery
1 lg green pepper

1/2 - 1 tsp ground mustard
2 tsp oregano
2 TBSP worcestershire sauce
1 TBSP ground cumin
1 TBSP chili powder
1 TBBP hungarian paprika
S & P (heavy on the pepper and taste at the end for more salt)

2 15oz cans dark red kidney beans
2 15oz cans black beans (I like the seasoned ones)
16oz pkg frozen corn (or canned)
1 31oz & 15oz crushed , stewed or diced tomatoes (I usually have some with green chilis or specy red pepper)
8oz diced green chilis (I usually add more and I usually buy a box and fired roast them myself and dice and freeze)
1 4oz can tomato paste

top off with V-8

Brown turkey with a little oil as turkey is rather lean) with onions and them add garlic. Add grn pepper and celery. Cook a few minutes. Add spices stirring well. Add canned beans and chils and corn. Taste for salt. If needed add V-8.

Cook on med-low for 30 -45 minutes. Turn off and let sit. I find they flavors enhanced when it sits overnite (you can refrigerate...I don't til next morning.) When ready to heat place back on heat and warm. I DO NOT recommend anything other than a stainless steel or ceramic cast pot for this.
