1 Pork Shoulder (about 8 lbs)
2 cups water
1 cup apple cider vinegar
1 can chipotles in adobos sauce
1/2 yellow onion, chopped
3-5 cloves garlic
Salt
Pepper
Canola Oil

Directions:
Directions:
Preheat oven to 300º F
Salt and pepper the pork on all sides
Heat a Dutch oven on medium high heat on the stovetop - add canola oil to coat bottom
Brown the pork on all sides - then turn off the stove
add the chopped onion, whole peeled cloves of garlic, water, vinegar, and chipotles in adobos
Put the lid on the Dutch oven and put it in the preheated oven
Bake for about 3 hours or until pork pulls apart easily with a fork
