1 T. bacon grease
white of green onions : Saute together
4 to 5 garlic cloves

1 C. heavy cream
1 C. whole milk : Bring to a scald(bubbles) and whisk in grits
16 oz. chicken stock Cook about 15 min.
1 C. grits

4 oz. cream cheese : Turn off heat and put the cheeses on top
8 oz. extra sharp cheddar

After putting all this together, I would put the grits mixture in a casserole and slid into a 325o oven for a few minutes until the cheese melt.
