4 oz egg whites
½ cup oatmeal
2 Tbsp Splenda or to taste
2 Tbsp mashed banana (optional)
3 Tbsp sugar free preserves
1 tsp cinnamon
½ tsp Butter Buds or butter flavoring (I use both)
½ tsp baking powder
1 tsp vanilla

Directions:

Mix all ingredients in a blender. Use non-stick skillet and cook pancakes. Each recipe makes four pancakes. Can be doubled or tripled to make more.

Since I’m not crazy about bananas, I usually omit the banana. However, I can handle 2 tablespoons so if I happen to have a banana I add it. I also adjusted the amount of flavorings to suit my taste. Shirley Meadows gave me the recipe in 2015.
