5 large potatoes peeled and cubed
4 large eggs
2 1/2 T. flour
2 1/2 T. mayo
1 1/2 t. salt
1/8 t. black pepper
3 t. sesame seeds
1 medium onion, diced and sautéed

Directions:
Directions:
Cook potatoes on high/medium fire until soft, adding a pinch of salt while cooking. Drain potatoes and mash well. Add 3 eggs beaten, flour, mayo, salt and pepper, and onions and mix well. Preheat oven to 350º. Place in muffin tins. Beat remaining egg and brush with remaining egg and sesame seeds. Bake uncovered @350º for 45 minutes or until golden brown.
