"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
10-12 cups apples - peeled, cored and sliced
1 cup sugar
1 tbsp flour
1 tsp cinnamon
1/2 cup water
1 cup quick-cooking oats
1 cup flour
1 cup brown sugar, packed
1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup butter, melted

Directions:
Directions:
1. Preheat oven to 350ºF.
2. Place the sliced apples in a 9x13 pan. Mix the white sugar, 1 tbsp. flour and ground cinnamon together and sprinkle over apples. Pour water evenly over all.
3. Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
4. Bake for about 45 minutes.

**Variation - You can put the apples, sugar, flour and cinnamon together in a large bowl and mix together, then pour into a 9x13 pan. If you do this step you won't need to put the water in which will make your apple crisp less runny (this is what I do).
