Cake mix:
• Non-stick cooking spray
• 1 box Dark Chocolate Cake mix
• 1-1/4 cups water
• 1/3 cup vegetable oil
• 3 large eggs

Filling:
• 1 can cherry pie filling
• ½ tsp. almond extract

Frosting:
• 1 pt. heavy cream
• ½ tsp. almond extract
• ½ cup powdered sugar

Garnish:
• Chocolate curls or sprinkles (optional)

Directions:
Preheat Oven to 350°F. Spray two 8” or 9” round cake pans with non-stick cooking spray.

Prepare and bake cake mix as directed on the box, using water, oil and eggs. Cool 15 minutes. Cut around pan parameters, remove cake from pans. Cool 1 hour until completely cooled.

Combine filling ingredients in small bowl.
Beat cream in medium bowl at high speed until slightly thickened. Beat in almond extract. Gradually add powdered sugar, beating until stiff peaks form.

Place 1st cake layer (top-side-down) on a serving plate. Spread 1 cup filling on top, to within 1” of the edge. Add 2nd cake layer (top-side-up). Frost sides and top with whipped cream.

Spoon remaining cherry filling, on the center of cake top. Garnish with chocolate curls or sprinkles. Store in refrigerator and cool before serving.
