2 tsp. Paparika
½ tsp. dried Mexican Oregano
1 tsp. dried Thyme
½ tsp. ground Cayenne Pepper
1 tsp. Sugar
1 ½ tsp. Coarse Salt
1 tsp. freshly ground Black Pepper
6 4 oz. Red Snapper fillets with skin
2 tsp. extra virgin Olive Oil

Serves 6

(1.) In small bowl, combine the paprika, oregano, thyme, cayenne, sugar, 1 tsp. salt, black pepper. Set aside. (2.). Place the fillets on dry work surface, skin side up & cut 3 -4 shallow slits across skin the keep it from curling up while cooking. Turn fillets over & sprinkle each fillet with spice mixture, pat gently with hands to make mixture stick. Cover & place in refrigerator for 1 hour. (3.) Heat 1 tsp. oil in a heavy skillet, when hot but not smoking, add half the fillets, seasoned side down. Cook until well browned , about 2 minutes. Flip; cook until fish is cooked thru , 2 -3 minutes. Carefully wipe skillet with paper towel. Repeat with remaining oil & fillets.
