1 lb. Italian sausage
1 cup coarsely chopped onion
2 garlic cloves, chopped
5-7 cups beef broth
2 cups crushed tomatoes
1 cup thinly sliced carrots
½ tsp. basil
½ tsp. oregano
1 (8 oz.) can tomato sauce
1 ½ cup sliced zucchini
2 (10 oz.) packages cheese tortellini

Directions:
Directions:
Brown sausage in large soup kettle. Drain. Add onion and garlic and saute quickly as sausage continues to cook. Add all other ingredients except tortellini. Bring to boil; reduce heat and cook 40 minutes. Cook tortellini separately in small saucepan for 6 to 8 minutes. Do not overcook. Drain. Add to soup mixture and simmer for 5 to 10 minutes longer. Serve with Parmesan cheese. Add water if necessary. Serve with garlic bread.
