2 1/2 C. water
1 tsp lemon pepper'
1 tsp cumin seeds
1 tsp. ground cumin
1 garlic clove, minced
1 C. chopped onion
2-3 T. lime juice
4 skinless chicken breasts (about 1 1/2 lbs.)
2 9-oz.pkgs.shoepeg frozen white corn
2 4-oz. cans diced green chiles, undrained
2 15 oz. cans Great Northern Beans, undrained

optional: 2/3 C. chips and shredded Monterrey Jack cheese

In a 3 1/2 quart pot, combine water and lemon pepper

In a saucepan, lightly brown chicken with whole cumin seeds. (Can also boil and debone chicken) Chop - 1 inch pieces - and add to pot. Soften onion in pan from chicken. Add garlic, onion, corn, chiles, ground cumin, beans and lime juice. Stir.Cover and cook 30 min. to 1 hour.

To serve, place about 1 T. of chips and cheese in soup bowl. Add hot soup and serve.
