4 oz. butter
1 tbsp. Golden Syrup (or maple syrup)
1 c. coconut
pinch of salt
1 tsp. baking soda
1 c. flour
1 c. sugar
1 c. rolled oats
2 tbsp. boiling water
vanilla

Directions:
Directions:
Sift flour and salt together. Melt butter and golden syrup in a saucepan.
Dissolve baking soda in the boiling water. Mix all ingredients together in a large bowl, by hand. Drop by spoonfuls on a prepared (greased) cookie sheet. Bake at 325-350°F for 10-15 minutes.

The Australian and New Zealand Army Corps was a combined force of volunteer soldiers formed in Egypt during World War I, who were involved in what was then the largest military landing in history, in Gallipoli, Turkey in 1915. Anzac has come to refer to returned soldiers from World Wars I and II and the Vietnam War. Anzac Day, April 25, commemorates the fallen Australian and New Zealand forces of all wars. The modest Anzac biscuit (cookie) keeps their memory alive.
