1 c. sugar
1 tsp. salt
1 tsp. cinnamon (adding nutmeg is optional)
1 lb. pecan halves
1 egg white (at room temperature)
1 tbsp. water

Directions:
Directions:
Preheat the oven to 300ºF. Place foil over cookie sheet; coat with butter.
In a bowl, mix sugar, salt and cinnamon; set aside.
With a whisk, beat the egg white and water until frothy (but not stiff).
Add pecans and stir until fully coated.
Add sugar mixture and stir until pecans are fully coated.
Spread pecans evenly onto the foil-lined cookie sheet.
Bake 15 minutes, gently break apart with fork; bake another 15 minutes.
Makes 1 lb. Store in a tightly covered container.
