⅓ c. shortening
1 c. sugar
¾ c. milk
1 egg
1¼ c. all-purpose flour
1½ tsp. baking powder
½ tsp. salt
1 tsp. vanilla
⅓ c. butter
⅔ c. brown sugar (packed)
1 20 oz. can crushed pineapple (drained)
½ c. walnuts (chopped)
7 maraschino cherries (halved)

Preheat oven to 350°. Prepare cake by creaming shortening and sugar in a mixing bowl. Add milk and egg and blend well. Add flour, baking powder, and salt. Beat on low speed for 30 seconds, scraping constantly. Beat for 3 minutes on high speed, scraping bowl occasionally. Prepare a 9 or 10 inch cast iron skillet by melting the butter in the oven. Then sprinkle the brown sugar over the butter, then the pineapple, and then the walnuts. Place the maraschino cherries into the sugar mixture. Gently pour cake batter over sugar mixture. Bake 35 to 45 minutes or until wooden toothpick inserted in center comes out clean. Invert cake unto plate leaving the pan over the plate for a few minutes. May serve warm and with whipped cream if desired.
