¼ c. butter
¼ c. flour
½ tsp. salt
¼ tsp. pepper
2 c. milk (whole)
3 c. sharp cheddar cheese (shredded) separated
2 to 3 T. cream sherry (optional)
4 to 5 c. cooked elbow macaroni

Directions:
Directions:
Preheat oven to 350°. In a medium sauce pan, melt butter. Blend in flour, salt, and pepper. Continue to cook over low heat stirring until smooth and bubbly. While continuing to stir, add milk slowly and mix until well blended. Heat to boiling, stirring constantly. Boil and stir for at least one minute to let thicken. Add 2½ c. cheddar cheese and continue to stir until the cheese is melted. Stir in cream sherry. Add macaroni and stir until well coated. Pour mixture into a greased baking dish and sprinkle remaining cheddar cheese on the top. Bake at least 30 minutes, or until hot and bubbly.
