12 slices Asiago cheese bread
4 c. cheddar cheese, shredded, divided
2 c. cooked sausage (may substitute smoked sausage, ham, etc.)
6 lg. eggs, lightly beaten
3 1/2 c. milk
2 tbsp. dried minced onion
1/2 tsp. salt
1/4 tsp. dry mustard

Remove crust (optional) from 6 slices of bread and cut into small cubes. Place in greased 13"x9"x2" baking dish. Sprinkle with 3 cups of the cheddar cheese; top with crumbled sausage. Arrange remaining 6 slices of bread over meat. Combine eggs, milk, onion, salt and dry mustard in a small mixing bowl and beat well. Pour egg mixture over bread slices. Cover and chill at least 6 hours or overnight. Bake, uncovered, at 325º for 1 hour and 10 minutes. Remove from oven and top with remaining 1 cup of cheddar cheese. Bake an additional 5 minutes or until cheese melts. Let stand 10 minutes. Cut into squares and serve immediately.
