"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

1 c. sugar
1/2 c. warm water
3/4 c. milk
1/2 c. butter
4 lg. eggs
7 c. flour

Directions:
Sprinkle yeast and 1 teaspoon sugar into warm water in a 2-cup measuring cup. Stir. Let stand for 10 minutes (it will bubble up, if not the yeast is bad.) Heat remaining sugar, salt, butter and milk in a saucepan. Stir until butter melts and cool to lukewarm. Beat eggs, reserve 2 tablespoons. Add eggs ad yeast to milk. Beat in 3 cups of flour with mixer until smooth. By hand, add enough flour to make a soft, satiny dough. Knead until smooth and shape into a ball. Turn into a greased bowl and turn over to grease ball. Cover and let rise for 1-1 1/2 hours. Punch dough down, turn over and rest 10 minutes. Divide in half. Take one piece and divide into 3. Roll under hand to make rope. Braid loosely. Tuck under ends and place on greased sheet. Cover and let rise 1 hour. Repeat with other piece of dough. Brush with reserved beaten egg. Bake at 350º for about 35 minutes or until golden brown and sounds hollow when tapped with finger. Cool carefully on racks.
