4 cube steaks
2 cups flour
1 1/4 tsp baking powder
3/4 tsp baking soda
1/2 tsp black pepper
1/4 tsp salt
1 cup buttermilk (or add 1TB lemon juice to 1 c.regular milk)
1 egg
2 cloves garlic (or 1/4 tsp garlic powder)
Shortening for deep frying

Directions:
Directions:
1) Pound steaks to about 1/4 inch thickness. Season with salt to taste.
2) Put 2 cups flour in a pie pan.
3) In a separate bowl, whisk the egg and gradually add the buttermilk in.
4) Combine baking powder, baking soda, pepper and garlic, and add to the egg and buttermilk.
4) Dredge each steak in the flour, then buttermilk mixture, then back into the flour. Set on separate plate to rest for 10 minutes.
5) Heat at least 1/2 inch of oil in a deep fry pan, on med. high.
6) Fry steaks 3 to 5 minutes per side, till coating is golden brown. Place steaks on paper towel lined plate.

The steaks are so tender, yet crispy on the outside. Byron never had a country fried steak before, and now he says 'This is a keeper!'
