Crust:
• 1-1/3 cups vanilla wafer crumbs
• 2 Tbsp. sugar
• ½ stick butter (melted)

Filling:
• ½ cup sugar
• ½ tsp. grated lemon peel
• 1-1/2 cups water
• 1 pkg. Strawberry Jell-O (3 oz.)
• 1-1/2 cups fresh sliced Strawberries
• 1 cup sour cream

Prepare Crust:
Preheat oven to 350°F. Mix together wafer crumbs and sugar. Stir in melted butter. Press mixture firmly into bottom and sides of a pie pan. Bake at 350°F oven for 5 minutes. Let cool.

Prepare Filling:
In a saucepan, mix sugar and lemon peel. Add only 1 cup water (reserving ½ cup). Heat to boiling, and add Jell-O, stirring until dissolved. Remove from heat, stir in remaining ½ cup water and chill until partially set. Whip partially set Jell-O to a fluffy gelatin consistency.

In a separate bowl, beat sour cream (highest speed) until whipped cream consistency. Fold into whipped gelatin. Fold in sliced strawberries (reserve some to garnish pie).

Add filling to cooled pie crust. Garnish pie with reserved strawberry slices. Refrigerate for 2-3 hours before serving.
