6 cup flour
2 tbsp yeast
1/2 cup sugar
1 tbsp salt
3 cup warm water
-4 quarts water
-1/8 cup brown sugar

*you can add grain, nuts, cinnamon, raisins, etc

Directions:
Directions:
Mix dry ingredients together. Make a well in center add water and mix all together. Knead 10 minutes or until only slightly sticky. Dough will be quite stiff. Cover in oil and let rise 1 hour or until doubled in bulk. Punch down and form into 18 small balls. Punch a hole with finger in center and shape into bagels. Let rise 1/2 hour.
Boil for 30 seconds each side in sugar water. Apply egg wash and sprinkle with sesame seeds or poppy seeds
Bake at 425º for 23 minutes
