1 (3-pound) chicken, quartered
1 lb. smoked sausage
1 cup chopped onion
1 stick butter
2 tsp. Lawry's Seasoned Salt
2 tsp. House Seasoning
1 tap. ground black pepper
3 bay leaves
8 cups water
3 cup uncooked white rice

Directions:

Slice sausage into 1/2-inch pieces. In a stock pot, combine chicken, sausage, onion, butter, seasonings, and bay leaf. add water, bring to a boil, cover and simmer on low for 40 minutes.

Remove chicken from pot and let cool slightly. Pick the meat from the bones, discarding the bones and skin. Set aside.

Add rice to the pot. bring to a boil, stirring well. Boil for 10 minutes, then reduce the heat, cover, and simmer for 10 minutes or until rice is done. Remove bay leaf, and return chicken to pot.
