1/2 c finely chopped onions
2 T butter
2 pkgs frozen spinach squeezed dry
1/2 lb cream cheese cut into small chunks
1/2 lb Jarlsberg or Guyere cut into small chunks
salt, pepper, lemon and nutmeg to taste
1 - 2 pkgs Phyllo dough
Melted butter to brush on phyllo dough

Saute onions in 2 T butter. Combine with spinach, cheeses, salt, pepper, lemon and nutmeg.

Begin by laying out defrosted phyllo dough and covering with a lightweight cotton dishtowel that has been lightly moistened to avoid the phyllo drying out as you work with it.

Take one sheet phyllo and lay out on work surface covering remaining phyllo with the damp towel. Lightly brush completely with melted butter. Add second sheet and brush with butter again. Cut lengthwise into 4 long strips. Put small amount of filling at the end of strip. Fold into triangle shape all the way up. Lay on cookie sheet and cover with a second dampened towel.

Bake at 400º 20 to 30 minutes until lightly browned.
