1 large ripe cantaloupe
1 small pkg any flavor gelatin
1 1/4 cup boiling water
1 (8 oz.) pkg cream cheese
Milk for softening cream cheese (use sparingly)

Directions:
Cut one end of melon so that it will stand level. Peel rind off melon carefully. Hold melon in a paper towel and cut hole in the non-level end of melon. Scoop out seeds carefully. Refrigerate melon. Dissolve gelatin in boiling water and chill until a little congealed. In shallow bowl stand melon with cut end up. Pour partially congealed gelatin into melon. Chill. Mix softened cream cheese with a little milk (and a bit of mayo). Pat melon dry with paper towel after gelatin had thoroughly congealed. Holding carefully, spread cream cheese over outside of melon. Chill completely and slice horizontally. Serve on curly endive.
