6 slices bacon, diced
2 T flour
1/2 cup sugar
1 teaspoon salt
1/8 teaspoon pepper
1 egg
1/4 cup cider vinegar
1 cup water
1/2 cup lemon juice
1 quart cooked, sliced potatoes
1/2 cup sliced onion
1/4 cup minced parsley
1 teaspoon celery seed

Fry bacon; drain excess fat reserving 1/4 cup in skillet. Add flour, sugar, salt and pepper. Blend well. Beat egg slightly. Add vinegar, water and lemon juice gradually to skillet and cook until thickened, stirring constantly. Add bacon, potatoes, onion, parsley and celery and toss lightly. Place skillet over very low heat and allow to stand 30 minutes to blend flavors.
