2 rolls Ritz crackers
3 large onions (I like Vidallia with this)
1 stick butter
2 T butter
2 T flour
1 c milk
1/2 tsp salt
dash pepper
1 c shredded Cheddar cheese

Directions:
Directions:
Butter a casserole dish. Crush 1 roll of crackers and spread in pan. Saute onions in 1 stick of butter until onions are tender. Spread over crackers. In saucepan, melt 2 T butter over low heat. Add flour, stirring until smooth. Cook 1 minute. Gradually add milk, stirring constantly until thick and bubbly (about 3 minutes). Stir in salt, pepper and cheese until smooth. Pour over onions. Crush remaining crackers and spread over cheese mixture. Dot with butter and bake at 350º for 35 minutes.
