1 lb. sausage
1 C chopped onions
2 C carrots, sliced
1 C celery, sliced
6 C beef broth
½ C red wine
1 16oz can whole peeled tomatoes
1 C ketchup
1 t Italian season
2 cloves garlic, minced
1 C zucchini, sliced
1 lb fresh tortellini pasta
1 red bell pepper, diced
¼ C parsley, chopped
salt & pepper to taste
2 T grated Parmesan cheese

Directions:
Directions:
Brown sausage in pot, drain off fat. Add onions and sauté until tender. Add carrots, celery, beef broth, wine, tomatoes, ketchup, Italian seasonings and garlic. Bring to boil and simmer 30 min. Skim away fat from soup.

Stir in zucchini, tortellini, red pepper and parsley. (If you use fresh tortellini, cook these according to package directions) Simmer covered for about 30 min. or until tortellini are tender. Season with salt and pepper. Sprinkle with cheese right before serving.
