9½ - 10 lb Rib Roast

Season Roast 2 - 24 hours before cooking - Rub with salt, pepper, and J Lee Roy's

Directions:
Directions:
Roast should be room temperature before cooking.

Preheat oven to 500 °F. Place roast on shallow pan and put in oven for 15 minutes.

Turn oven down to 325 °F and place temperature probe in center of meat. Set probe at 130 °F for Medium Rare roast.

Should take about 2½ hours in oven. Remove from oven and let rest for 20-30 min. before carving.

Serve with hot Au Jus.
