3-6 boneless skinless chicken breast
2 eggs
½ t salt
½ t pepper
1 C bread or cracker crumbs
½ C oil
2 C tomato sauce
½ t garlic powder (I use 1 clove fresh garlic,chopped)
¼ t basil
1 T butter
8 oz. mozzarella cheese
½ C parmesan cheese

Directions:

Beat together eggs, salt and pepper. Dip chicken in egg mixture, then into crumbs. Brown chicken in oil. Place in 9x9 pan. Add tomato sauce, garlic and basil to pan with remaining oil. Heat, stir to thicken. Melt in 1T butter. Pour sauce over chicken. Bake at 350 °F , covered for 1 hour. The last 10 minutes, put mozzarella and parmesan cheese on top.

I usually skip coating the chicken in the eggs and crumbs. I place chicken in pan, add tomato sauce and spices (spaghetti sauce will work too)

I serve over rice.
