¼ C butter or margarine, divided
¼ C flour
1 C milk
½ lb (8oz) Velveeta Cheese, cut into ½ inch cubes
2 C elbow macaroni, cooked and drained
½ C shredded Cheddar Cheese
6 ritz crackers, crushed

Kelli adds parmesan cheese, J Lee Roy's seasoning, garlic powder, salt & pepper.

Heat oven to 350 °F

Melt 3 T butter in medium saucepan on medium heat. Whisk in flour, cook 2 min., stirring constantly. Gradually stir in milk; cook until mixture boils and thickens, stirring constantly. Add Velveeta; cook 3 min. or until melted, stirrring frequently. Stir in macaroni.

Spray oven safe (2 qt size) bowl with cooking spray. Spoon in Mac & Cheese. Melt remaining butter and toss with cracker crumbs. Sprinkle over casserole.
