6-8 chicken breasts, boneless & skinless
1/2 c. butter - or more
1 1/4 c. Ritz crackers, crushed
4 eggs, beaten
1 1/4 c. mushrooms, sliced
1/4 c. white wine
6 - 8 slices of muenster cheese
The juice of 1 lemon

Place chicken in bowl of beaten eggs for 1 hour or longer. Heat butter in a large skillet sprayed with nonstick cooking spray. Using medium heat melt the butter. Roll chicken in crushed Ritz crackers and add to the skillet. Brown 2-3 minutes on each side being careful not to burn. Place chicken in a casserole dish, squeeze lemon juice over the chicken and then add the broth.
Saute the mushrooms in the same skillet with extra butter if need be. Saute with the wine for 2-3 minutes and then add the mushrooms to the chicken and finish off with the cheese slices.
Serve 6- 8 people easily

Bake at 350 degrees for 30-40 minutes
