2 cups cubed bread (sour dough, French or croustini)
1 T olive oil
3/4 cup garlic cloves, slightly crushed (about 2 heads)
1 1/2 cups chopped celery
1 1/2 cups chopped onion
4 sprigs thyme
2 (16 ounce) can navy beans, rinsed and drained
5 1/2 cups vegetable broth
ground pepper
balsamic vinegar

Preheat oven to 425 º. Coat bread cubes with cooking spray. Bake 8-10 minutes or until crisp. Set aside. While bread cubes bake, heat oil. Add garlic, celery, onions and thyme. Cook until tender (8 minutes). Add beans and broth. Bring to a boil. Cover and reduce heat and simmer 10 minutes. Remove thyme and add 1/2 teaspoon pepper. Place mixture in food processor and blend. Ladle into bowls. Top with croutons, additional pepper and a drizzle of vinegar.
