4 T margarine
2 C sugar
4 eggs
For Almond Biscotti: 4 t almond extract
For Chocolate Biscotti: omit ½ C Flour and add 2/3 C Cocoa
4½ C flour
1 T Baking powder
½ t salt
1½ C sliced or slivered almonds
1 egg white

Directions:
Directions:
Preheat oven to 350 °F. Grease and flour a large baking sheet.
In bowl, beat together the margarine, sugar, eggs and extract until smooth.
In a large bowl, combine the flour, baking powder, salt and almonds. Add the egg mixture to the flour mixture, mixing until a dough is formed.

Divide the dough into thirds. Working on a baking sheet, with floured hands, form each piece of dough into a flattish log. Brush with egg white.

Bake until lightly brown, about 30 min. Remove from oven and let cool for 5 min. On a cutting board cut logs diagonally into ¾ inch wide slices.

You can store in an airtight container at this point once cooled, or return to oven at about 250 °F for 5-10 min. on each side. The second baking will however require coffee or tea for dunking.
