2 pounds green beans, trimmed
1 large onion, thinly sliced
1 small red pepper, sliced thinly
6 ounces button mushrooms
4 ounces cream cheese
2 ounces Parmesan cheese
1 T olive oil
1 T soy sauce
1 brown sugar
1/2 cup Panko crumbs

Directions:
Directions:
Preheat oven to 400º. Cook green beans in small amount of boiling water about 3 minutes. In a large casserole, combine blanched green beans with fresh mushrooms and red pepper. Toss with olive oil and soy sauce to coat. Roast for 12-15 minutes. In the meantime, saute onion and brown sugar in olive oil until tender. Toss with panko crumbs. Set aside. When vegetables are roasted, blend in cream cheese and Parmesan. Top with onions and bake an additional 8-10 minutes.
