"The most remarkable thing about my mother is that for thirty years she served the family nothing but leftovers. The original meal has never been found."--Calvin Trillin

dash of salt
2 cups sifted all purpose flour

Directions:
Cream butter and add sugar a little at a time. Mix well, add vanilla and salt. Stir in flour and mix well. Turn out dough on a lightly floured board. Handle very gently as it is a delicate dough. Roll out to 1/2 inch thickness. Cut into squares. Prick tops with tines of a fork. Place on ungreased cookie sheet and bake at 325 degrees for 15-20 minutes or until edges are a very light brown.

(I like to roll them a bit thinner, about 1/4 inch, but the original recipe calls for 1/2 inch)

Personal Notes:
This recipe was given to me by a neighbor who was from Scotland. She said that she had changed her mother's recipe until she got the closest to the taste of the ones that were made by her mother. Our ingredients are much different from theirs.
