3 cans medium size peas
1 med. onion, chopped fine
4 hard-boiled eggs, diced
1 c. celery, chopped fine
1 small jar diced pimentos
1 c. water chestnuts, chopped fine
4 to 5 tbsp. mayonnaise
1 tsp. salt
1 tsp. pepper

Directions:
Empty peas into colander and rinse well with cold water. Drain well. Mix all ingredients, except mayonnaise, and chill overnight. Drain again if necessary. Mix in mayonnaise about 1 hour before serving.
