4 Sweet Potatoes
1 Pound Baby Carrots
1/4 Cup Olive Oil
Basil
Sea Salt

Directions:
Peel sweet potatoes and slice into rounds about 1/2-3/4 inch thick.

Put sweet potatoes and carrots into gallon-sized ziploc bag.

Mix together olive oil, basil and sea salt. Pour over sweet potatoes and carrots. Seal ziploc bag and let marinate for 2-3 hours.

Preheat oven to 400º.

Pour sweet potatoes, carrots and seasoning mixture onto large cookie sheet with sides. Spread out where everything is in a single layer.

Bake for 30 minutes. Turn everything over and bake for another 20-30 minutes.
