3/4 cup (packed) grated extra sharp cheddar cheese
3/4 cup grated pepper jack cheese (or 3/4 cup crumbled blue cheese)
1/3 cup (packed) freshly grated Parmesan cheese
6-8 large russet potatoes, peeled and thinly sliced into rounds
1 1/2 tsp. salt
1/2 tsp. grated black pepper
1/4 cup finely chopped onion
3 TBS. all-purpose flour
4 TBS. butter
3 cups whole milk

Preheat oven to 400 degrees. Lightly butter a 13 x 9 x 2 inch glass casserole. Mix cheeses in a small bowl. Arrange half the potatoes in the prepared baking dish. Sprinkle top with half of the salt and pepper. Sprinkle onion over, then flour. Dot with 2 TBS. of the butter. Sprinkle half of the cheese over the potatoes. Top with the remaining potatoes, the remainder of the salt and pepper and 2 TBS. of butter. RESERVE REMAINING CHEESE. Bring the milk to a simmer in a medium saucepan. Pour milk over potatoes (milk will not cover completely). Cover baking dish tightly with foil. Bake for one hour. Uncover dish (liquids may look curdled). Sprinkle with reserved cheese mixture. Bake UNCOVERED until potatoes are tender and cheese is a deep golden brown- 45 minutes to an hour. Can be prepared 2 hours ahead.( If so - Let stand at room temperature. Then cover and rewarm in a 375 degree oven for about 20 minutes).

I usually serve these potatoes with baked ham for Easter dinner. These are rich but a great "special occasion" dish.
