1 lb. Hamburg, seasoned with onion, salt and pepper, to your liking- recommend you use the leanest ground beef you can get.
4 or 5 carrots, peeled, sliced and parboiled (save the water)
4 or 5 potatoes, medium sized, peeled and sliced
Butter, about 1/2 stick

In a casserole, place layer of potatoes, carrots and Hamburg. Repeat until all ingredients have been used, ending with a layer of potatoes. Pour over this the water from the carrots. Dot with butter and place in 350 degree oven. Cover the casserole until the potatoes are nearly done, then uncover and continue cooking until completely done and top layer of potatoes are browned. (Cook for 40 min approximately) Remove from oven.

This is Gram Phillips' recipe, which she served often when I was a teenager living with them. It is in the Cookery Craft cookbook put together by the Eastern Star in Amherst, Mass in the early 60's.
