-1 cup corn meal mix
-1 small can of creamed corn
-2 eggs
-1/2 cup oil
-8 oz. sour cream

-Mix all ingredients together.
-Spray or grease a deep dish pie pan or a 9 in. square pan.
-Bake at 400 for 20 minutes.

(I use Martha White mix, but any self-rising corn meal mix will do)

Recipe from my dear friend, Brenda Simpson of Charlotte, NC. We used to do weddings together in the 80's and 90's, I directed the ceremony and arranged the flowers, she catered the reception and made wonderful wedding cakes. She made cakes for all our families' weddings.
