9 cups of water
1 pound of dried green split peas
2 smoked ham hocks
2 sliced leeks
4 stalks of celery diced
1/2 pound of smoked sausage

1 bay leaf
1 teaspoon of salt
1 teaspoon of pepper

Directions:
Directions:
Heat water and peas to boiling in dutchoven and boil for 2minutes.
Remove from heat and let stand for 1 hour.
Add remaining ingredients except sausage. Cover and simmer until pork is tender
( I like to boil my ham hocks first to remove some of the fat and salt)
Simmer for about two hours
Add sausage cut into slices and continue to simmer until sausage is hot..
***this can also be made in a crock pot***

According to Dutch tradition, the soup should be so thick that a spoon will stand upright in it.
This makes a good winter meal served with some warm bread or rolls
