¼ c. coconut oil (divided)
½ c. almond milk
3 eggs
3 T. honey
2 tsp. vanilla
1⅓ c. almond flour
3 T. unsweetened cocoa powder
2 tsp. cinnamon
¼ tsp. salt
1 cup dried cranberries (i.e., Craisins)

Directions:
Directions:
Preheat oven to 400º. Place 1 T. of the ¼ c. of coconut oil in a 10 in. oven-safe skillet over low heat. In a large bowl, whisk together the almond milk, eggs, remaining coconut oil, honey, and vanilla. In a separate bowl, mix the almond flour, cocoa powder, cinnamon, and salt. Add to liquid ingredients and stir to combine. Pour the batter into the skillet. Sprinkle cranberries on evenly on top. Bake for 15 to 20 minutes until set. Allow to cool at least 5 minutes before serving.
