coconut oil for oiling pan
½ c. coconut flour
½ tsp. baking soda
¼ tsp. salt
3 eggs
½ c. coconut oil
¼ c. coconut milk
⅓ c. honey
2 tsp. vanilla
2 egg whites

Directions:
Directions:
Preheat oven to 350º. Oil a 9 in. heavy skillet (I use a non-stick cast iron fry pan). In a large bowl, sift together coconut flour, baking soda, and salt. Set aside. In another bowl, whisk together 3 eggs, coconut oil, coconut milk, honey, and vanilla until foamy. Add the wet to the dry ingredients; mix well. In another large bowl, beat the egg whites with a hand mixer until thick, soft peaks form. Fold very gently into cake batter. Bake for 28 to 30 minutes, or until a toothpick inserted into center comes out clean and cake is golden.
