-5 c. Sweet potatoes (diced 1/4 in.)
-5 c. Granny Smith apples (chopped)
-1 1/2 c. Brown sugar (firmly packed & divided)
-1 c. Quick cooking oats
-1/4 c. All purpose flour
-1/2 c. Butter (melted)
-1/4 c. Butter (cut into pats)
-2 tsp. cinnamon (divided)
-1/4 tsp. salt

-Preheat oven to 400º.
-Put potato slices in cold water.
-Toss the apples in lemon juice so they will not turn brown. In large bowl, combine potatoes & apples.
-In small bowl, combine 1/2 c. of the brown sugar, 1 tsp. cinnamon, 1/4 tsp. salt.
-Add this to sweet potato/apple mixture and toss to combine.
-Spoon mixture into 13X9 dish and dot with butter pats.
-In small bowl, combine oatmeal, 1 c. brown sugar, 1/4 c. flour, 1 tsp. cinnamon and stir in melted butter.
-Spoon this evenly over top of casserole and bake covered with foil for 45 mins. -Uncover and bake for another 30 mins.

Tasty, and a healthier choice than typical sweet potato/yam dishes (which can be made too sweet in the South for sure!) Nice for Easter dinner, Thanksgiving.
