1 pie crust baked in 8-9" tart pan according to pkg directions (I put it into pan, prick the bottom well with a fork, and freeze before putting into oven until golden)
about ¾ c. olive tapenade (I use Trader Joe’s, but most grocery stores have a brand)
4 oz. herbed goat cheese, separated into chunks or crumbles
½ c. roasted red pepper strips if desired (you can make or buy in most delis)
2 eggs beaten
1 c. ½ and ½ or cream
2 t Fines Herbes seasoning (I use Penzey's)
1 t. garlic salt
Pepper to taste

Beat eggs, cream, and seasonings together. In cooled crust, spread tapenade to cover, and then sprinkle goat cheese chunks over olive. Top with red pepper if desired. Place tart inside a larger pan (to make transfer to oven easier and catch spills). Pour custard over filling until just under top of crust. Bake at 400F until set in center. Cool for 10 minutes and remove from pan. Note: you can bake this in a regular pie pan.
