2 eggs
1 1/2 C all purpose flour
3/4 C white sugar
1/2 tsp salt
1/2 C vegetable oil
1 tap ground cinnamon
1 C persimmon pulp
1/2 C chopped walnuts
1 tsp baking soda
1/2 C raisins

Directions:
Directions:
Preheat oven to 325º (165º Celsius) Oil a 9 x 4 inch pan. In a small bowl combine flour, cinnamon, salt, nuts, and raisins. In a large bowl blend eggs, sugar, and oil. Mix baking soda into pulp and add to sugar mixture. Fold in flour mixture. Pour abtter into prepared pan. Bake for 75 minutes, or until tester inserted in the center comes out clean.
