2 or 3 cups diced vegetables (such as sweet peppers of different colors, carrots, zucchini, yellow squash, mushrooms, garlic, and onion)

1 pkg. angel hair pasta
2 T. Olive oil
1 cup grated Parmesan cheese
1 cup (or more) half and half
1 cup frozen green peas
Chopped green. Onions
Black pepper, grated lemon

Directions:
Directions:
Dice vegetables fairly small. Bring 6-8 cups salted water to boil in large pan. Add all raw veggies except peas and green onions. Let cook about 5-10 minutes or until carrots begin to get tender. Add angel hair pasta and green peas. Cook until pasta is Al Dente.

Drain it all and put back in pan. Add olive oil ( you can substitute butter) and half & half. Mix well. Top each serving with green onions, black pepper, Parmesan, and grated lemon or lemon juice. ( Freeze lemon in advance to make it easy to grate.)

Serve with garlic bread.
