10 eggs
½ c. flour
1 pt. cottage cheese, small curd
8 oz. can diced chile peppers
1 stick butter
½ tsp. baking powder
1 lb. Jack cheese, grated
1 tbsp. salsa

Directions:
Directions:
Melt butter in a small bowl in microwave.
In large bowl, beat eggs lightly; add all other ingredients stir until flour is smooth. Pour into a 13x9 glass dish. Bake 10 minutes at 400°F, then reduce heat to 350°F and cook for another 40 minutes.

Served during the Annual Rockport Shrimp Boil.

In 2003, I was the Vice Commodore of Rockport Yacht Club (RYC). It was the first year I had the pleasure of meeting TMCA. Doc and Monica along with Luke and Linda hosted TMCA for their annual Shrimp Boil & Cruise to Rockport. That first year, RYC hosted a cocktail hour at the Club on Friday night and on Saturday Doc, Luke and the team shopped, prepared, cooked and served a wonderful boiled shrimp dinner along with Luke's famous Shrimp Ettouffe. Boy, was it fun.
In 2004, when I was Commodore, we expanded the event to Friday night. Happy Hour was hosted by RYC along with wonderful burgers cooked on the grill. Saturday was all day fun and wonderful shrimp hosted by Doc and Luke. Sunday, the RYC ladies served a Sunday Brunch complete with music and mimosas, what could be better.
We continued this tradition for many years, but it ended in 2013. I sure miss it. This event was my opportunity to meet so many of the great people from TMCA. Now, I have joined your team and hope that we will be able to get more involved this year. These recipes are a sampling of what we served during those weekends. I hope you enjoy.
