4-6 boneless/skinless Chicken breasts (approx 1½ lbs) - enough to layer base of 9x14 baking dish
2 eggs – beaten in a separate bowl
1 cup Flour
Salt, Pepper, Garlic Powder (to taste)
1 cup cooking oil (approx)
1 14 oz can diced or crushed Tomatoes, drained
2 cup shredded Mozzarella Cheese
1/3 cup chopped fresh Parsley
1/2 cup grated Parmesan Cheese

Directions:

Preheat oven to 375º.

Slice chicken breasts horizontally in half - into thinner cutlet sized pieces.

Combine well flour, salt, pepper and garlic powder.

Dredge chicken pieces in seasoned flour and then in beaten eggs.

Heat oil to medium and fry chicken to golden brown (approx 2-4 min/side). Drain chicken on a plate lined with paper towel and season with salt/pepper.

Position each chicken piece side-by-side in 9 X 14" baking dish. Spread tomatoes over chicken and bake for approx 15 minutes.

Spread shredded mozzarella cheese generously over top – continue baking for another 10 minutes. Remove from oven, spread Parmesan cheese and garnish with parsley.
