1 1/2 cups all purpose flour
3/4 tsp salt
1/4 tsp. baking powder
1/4 cup chilled lard or solid vegetable shortening (Crisco)
1/4 cup chilled butter or margarine,cut into pieces
1/4 cup ice water

Filling
3/4 cup granulated sugar
1/3 cup all purpose flour
3 Tbl. cornstarch
1/2 tsp. salt
3 1/4 cups milk
yolks from 2 large eggs,beaten
1 1/2 Tbl. butter or margarine
1 1/2 tsp. vanilla
3/4 cup whipping cream
3 large,firm,ripe bananas,sliced

For garnish;
softly whipped cream,sliced kiwi fruit and bananas

To make crust;
Have a 9" deep-dish pie plate ready. Mix ,flour salt,and baking powder in medium-size bowl. Cut in lard and butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
Stir in water with a fork until dough holds together, Roll out on a lightly floured surface to a 12" diameter circle. Line pie plate, trim edges, turn under and flute. Prick pie dough all over with fork. Chill until firm. Meanwhile heat oven to 400ºF. Bake shell 15 minutes. Reduce oven to 350ºF and bake 5-8 minute longer until dry and lightly browned. Cool on wire rack.

To make filling;
Mix sugar, flour,cornstarch and salt in a medium-size bowl. Gradually stir in 3/4 cup milk,then the egg yolks until well-blended. Meanwhile, heat remaining 2 1/2 cups milk in a 3 quart saucepan over medium heat just until warm. Gradually stir in flour mixture ,cook 10-15 minutes,stirring constantly,until thick and smooth. Remove from heat;stir in butter and vanilla. Transfer to a large bowl. Cover surface of custard with plastic wrap. Refrigerate at least 2 hours or until thoroughly chilled. To assemble; whip cream until stiff peaks form when beaters are lifted. Fold into custard;spoon 1/3 into baked shell; top with 1/2 of the banana slices. Repeat layer once. Cover with remaining custard mixture and chill until firm,at least 3 hours or overnight. Garnish just before serving.

Microwave Method
Bake pie shell in conventional oven. Reduce milk to 2 3/4 cups. Mix sugar,flour,cornstarch and salt in a 3 quart bowl. Gradually whisk in the milk until smooth. Microwave uncovered on high for 9-10 minutes,whisking once,until slightly thickened. Stir a few Tbls. into egg yolks, then add to mixture remaining in bowl. Microwave on high 1- 1 1//2 minutes longer until mixture is thick . Proceed as directed.

Not sure of this is the actual Banana Cream Pie recipe we used, I found it in with the other Cooking Club Recipes and it comes from Woman"s Day,11/24/87. If you use a bought pie crust it is not as labor intensive.
